  • 1/2 cup shredded carrots

  • 1 ripe banana

  • 1/4 cup dried oats

  • 2 tbsp maple syrup

  • 1/4 cup shredded coconut

  • 1/4 tsp fresh ginger

  • 1/4 tsp vanilla extract

  • 1/2 cup ice






Directions

  1. In a blender, blend non-dairy milk, shredded carrots, banana, oats, maple syrup, cinnamon, ginger, and vanilla extract until smooth.

  2. Stir, then add ice + shredded coconut to the blender

  3. Blend again until smooth.
