Sweet Potato Gnocchi (VEGAN + GLUTEN-FREE)

Gluten-Free Sweet Potato Gnocchi RECIPE

PREP TIME: 20 min

COOK TIME: 40 min

INGREDIENTS

  • 2 medium-sized sweet potatoes

  • 1 cup of gluten-free all-purpose flour

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of pepper*

DIRECTIONS

  1. Preheat your oven to 400°F (200°C).

  2. Wash the sweet potatoes, prick them with a fork, and place them on a baking sheet.. Roast for about 45-60 minutes or until they are soft.

  3. Let them cool, then scoop out the flesh into a bowl and mash it well.

  4. Add the gluten-free flour, salt, and pepper to the sweet potato mash. Mix everything together until a soft dough forms and be careful not to over mix.

  5. On a floured surface, divide the dough into small portions. Roll each portion into a long rope, then cut the rope into bite-sized pieces (about 1 inch long) (optional: you can create the traditional gnocchi ridges by gently pressing each piece with a fork)

  6. Bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water in batches. Cook until they float to the surface (about 2-4 minutes), then remove them with a slotted spoon.


    BONUS: Garnish with fresh herbs like parsley or basil, and a sprinkle of parmesan cheese if desired (not vegan, but delicious!). Toss in a pan with some olive oil to fry them up and give them a little crisp.
