Sourdough Grilled Goat Cheese Recipe

Sourdough grilled goat cheese is a marriage between my two favorite foods - if you know me well, you know I’m not exaggerating when I say, I LOVE goat cheese.
The tangy sourdough combined with the creamy goat cheese creates a delightful savory blend that you won’t be able to get enough of. Grilled to perfection, each bite offers a crispy exterior giving way to a gooey, cheesy center that is simply irresistible.
And yes, this is my favorite thing to make for lunch :)
The natural fermentation process of sourdough helps to break down gluten and phytic acid, making it easier on the digestive system. Pairing it with goat cheese, which is easier to digest compared to cow's cheese, makes it a winning combo for gut health.
This recipe is packed with probiotics and nourishing protein which both support healthy digestion, plus using olive oil instead of butter makes it free of seed oils and helps reduce inflammation and bloating. I also add a secret ingredient that adds a punch of extra nutrients, plus some extra cheesy flavor :)

Sourdough Grilled Goat Cheese
Prep Time: 2 min
Cook Time: 5 min
INGREDIENTS
2 slices sourdough bread
2 oz goat cheese of choice
1 tbsp olive oil
1 tbsp nutritional yeast
*if you can tolerate acidic fruit, switch out nutritional yeast for peaches to add a sweet punch that goes deliciously with the tangy goat cheese
DIRECTIONS
Place a non-stick or oiled stainless steel pan over medium heat.
Take one slice of sourdough bread and spread half of the olive oil on one side.
Spread some goat cheese on the un-oiled side of the bread. If you’re adding extra toppings like peaches, add these here too.
Put the rest of the goat cheese on top of the other slice and close the sandwich with the other slice of sourdough.
Sprinkle some garlic powder into the pan and flip a few times to add some flavor to the crust.
Remove the sandwich from the pan, let it cool for a minute.
Next time you’re craving a grilled cheese, opt for this gut-healthier (and in my opinion, just flat-out tastier) version. If you’re like me, you’ll never want to go back to the original.
