Gut-Healthy Pumpkin Spice Pancakes

One of my favorite breakfast foods ever is a big stack of pancakes. Unfortunately, that doesn’t always agree with my stomach, and bloating will ensue :(

I came across this recipe that is gluten-free and uses pumpkin as one of the main three ingredients - it’s so easy to make, it’s easier on the stomach, and it’s packed with good stuff too!

Loaded with fiber, pumpkin can work wonders in aiding digestion and keeping things moving smoothly. Turns out, this vibrant orange veggie is also a superfood, too. Pumpkin is loaded with good stuff like potassium and vitamin C, which are essential for baseline holistic health.

Gut-Healthy Pumpkin Spice Pancakes

INGREDIENTS

  • 1 large egg

  • 1 egg white

  • ½ cup pumpkin puree

  • ½ cup gluten free all-purpose flour**

  • ½ tsp fresh ginger (grated)

  • cinnamon to taste (optional)

**NOTE: feel free to substitute the gluten free all-purpose flour with gluten-free pancake mix or oat flour


DIRECTIONS

1. Whisk together the eggs, pumpkin, flour, cinnamon, and ginger in a bowl.

2. Grease a large pan with coconut oil or avocado oil and place over medium heat. Once the pan is hot, pour about ¼ cup of the batter onto the pan.

3. Cook until bubbles form on the top or until the bottom is golden-brown, about 2-3 minutes. Flip and repeat on the other side.

Bonus: sprinkle some walnuts on top with a drizzle of maple syrup and a dollop of whip cream.

This is how they turned out! I like making them into small bite-sized pieces so I can eat them as a finger food (which I wasn’t thinking about when I poured the syrup...dang). The cinnamon was a good move as a replacement for sweetener too.
