Pistachio Nice Cream Recipe [Vegan]

This nice cream recipe is bursting with the goodness of healthy fats in pistachios and creamy coconut milk - it’s is not just a perfect fix for your sugar cravings, but also a powerhouse of health benefits!
This vegan, dairy-free, + gluten-free nice cream is the perfect treat for summer or any time you're craving a refreshing treat that won’t leave you skipping dessert because of your “tummy troubles” (I see you, IBSers). It also has no added processed sugar, so you can indulge guilt-free. Your gut (and your sweet tooth) will thank you for it.

pistachio Nice Cream
INGREDIENTS
2/3 cup unsalted, shelled pistachios
1/4 cup cashews
13.5 oz coconut milk
1 cup plant milk of choice
1/8 tsp salt
1.5 tsp vanilla extract
1/3 cup maple syrup/honey to taste
DIRECTIONS
1. Soak the pistachios and cashews for 20 minutes in boiling water, then drain and add to a blender along with 1 cup plant milk, the coconut cream, salt, vanilla extract and maple syrup.Blend until smooth.
2. Pour into ice cube trays and freeze for 1-2 hours until solid.
3. Once frozen, place in a high powered blender along with a splash of plant milk. Blend until a thick soft serve texture forms.
This is super easy and can also be made with a Ninja Creami! Serve with your favorite toppings like crushed pistachios and a drizzle of honey or syrup.
